Mommom Mac n’ Cheese

For Christmas a few years ago, my elder sister gave me a cookbook she had compiled filled with her favorite recipes, included in the book was my grandmother’s macaroni and cheese recipe.

It’s heavenly rich, and we make it for Thanksgiving every year. It’s also not a particularly health-conscious item, so certainly don’t make this if you’re on some kind of diet.

Let me take this opportunity to say that my grandmother, Mommom, is amazing. Born and raised in the backwoods of the North Georgia mountains, she’s as hardy as they come. She was born into the great depression, and didn’t have much growing up in a family of 10. But they always had food, churning their own butter, milking their own cows, growing all their vegetables. She is my inspiration. She is the one who taught me how to sew, garden, keep a house, bake cookies, make paper dolls- everything. Here is a short documentary about her that I made while in college at the University of Georgia.

With all that being said, we had people over to grill out last night, and this mac n’ cheese is perfect with a hot dog and some beer.

Ingredients:

  • 1 box elbow macaroni
  • 16 oz. extra sharp cheddar
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 small jar pimentos, drained
  • 1 jar sliced mushrooms, drained
  • 1 can cream of mushroom soup
  • 1 cup mayonaise
  • a few ritz crackers
  • crumbled blue cheese
  • butter, for dotting

Directions:

-boil water, add salt, cook macaroni for 6 minutes. Drain, rinse with water.

-Combine onion, pepper, pimentos, mushrooms, mayo and mushroom soup. Stir until well incorporated

-Grate Cheese.

-Add macaroni and vegetable mixture. Stir until mac is coated.

-Add almost all of the cheeese to macaroni/veggie mix. Stir to distribute cheese. Reserve excess cheese for topping.

-Pound crackers with blue cheese in ziploc bag.

-Add the mac mix to casserole dish. Top with cheddar, then crackers, then dot with butter.

Bake 45 minutes @ 350 degrees.
